Here is the criteria, has to be entertaining (good, excited, whatever you wanna call it), needs to have good or quality caliber opponents, ENTERTAINING FINISH. so here we go, the 10 most entertaining fights from the First 10 UFC's (IMO)
10. Tank Abbott vs Paul Varleans - uggh this Tank guy is facing the 6'7 Polar Bear, UFC 6. ends up with Tank holding the cage, pushing his knee into Varleans face while he is laughing. After pot shotting Varleans (who was trying to kick Tank) to a stoppage Tank said he was aroused when watching the replay (WTF).
9. Jerry Bohlander vs Scott Ferrozzo - Bohlander (a guy just pushing 200 pounds) was facing Scott Ferrozzo (330 pound) former noseguard in his debut. Fight was a war of attrition with Jerry surviving the initial bum rush, and having Ferrozzo on top of him, Jerry was busy from the ground though. Finally after damn near 10 minutes Jerry pulled a sick reversal on a takedown, knee'd a downed Ferrozzo in the head and choked Ferrozzo out. UFC 8

Varelans threw good knee's in the clinch and Worsham rocked him. Varelans lands a good answering elbow in a clinch, Worsham retreats, and Varelans chases him ges him in a clinch and knocks Worsham down with big 12 to 6 elbow's. Worsham tapped, Big John stepped in, and Worshams corner threw the towel in ALL AT THE SAME TIME. Trifecta!!!!!!In 1:04 seconds.

Sure it is a 2 minute wrestling match but they where both working for guillotine's and it was impressive to see Shamrock holding his own vs Severn who was a huge favorite and nearly 80 pounds heavier. Only 1 PUNCH IS THROWN IN THIS FIGHT!!!!!! It lands on Ken Shamrocks nuts, just before Severn drops to tap.

But damn it, it was the first fight in the UFC's history and it was memorable, you all remember where you were when you first saw it especially if you saw it live. After the kick seen round the world, Jim Brown says, "Ya that was definitely in the face" HAHAHAHAHAH

Oleg and Tank stand up in a good give and take, than Tank gets top game while Oleg waits it out. After 10 gruelling minutes the Tank has been fish hooking and punching Oleg while Oleg has been hitting the back of Tanks head from the bottom. After a stand up Tank mauls Oleg and Oleg gets a kneck. Tank falls and gets out of a deep guillotine, Oleg immediately get the hooks in and eventually gets Tanks back and RNC's him.

Add in Royce ran Kimo out of the cage literally. I dont have to tell you what happened in these fights cause you already know.
