| Smoke this! Nah, I've never cooked a turkey before. I leave that up to my MOMMY! My buddy at work fried one the other day for his first time and it was real good. Probably the best I've had. Ol Jimbo can't fuck anything up. The guy is a real pitmaster with a certification to prove it. Just a great cook. He didn't tell me what all he did. He always keeps everything a secret. I liked it more than the smoked turkey he made one time. Matter of fact he smoked a big ass butterball boneless turkey. It was great, but that fried turkey was awesome! I want more right now

you'd normally roast a turkey over here but i'm intrigued by the idea of smoking one. No it's the whole bird. Roasting is the most common but smoking and frying are getting extremely popular in the south. | |

| fry one and bake one(pull skin up and rub with butter,garlic, thyme and thinly sliced apples (for moisture)) pull the guts out that bitch and quarter a few onions,carrots,celery and few apples and stuff it full bake 20 minutes per lb
also doing a ham honey brown sugar little coarse sea salt and a crock pot | |

not sure i fancy southern fried turkey to be honest, though i imagine a slow smoked turkey would be delicious. An 18 lb bird fit easily in ours. We used 3 gallons of peanut oil, injected creole butter, and rubbed the outside with Tony Chachere. Got the oil to about 350, dropped the bird in, the temp drops a ton, about an hour or so later and it was ready. | |

I would love that. I'm serious about cooking one fir xmas and that recipe sounds delicious and different from what I'm used to seeing. you can brine the turkey if your a serious type dude google brine and you will get a salt soak recipe. Just be sure to thoroughly clean turkey once bird is thawed I mince some garlic(or buy some in a jar) rosemary leaves and a stick of butter. I gently pull the skin from the meat and massage like Jews X on a tali wacker. I then get some coarse sea salt thyme and some parsley and sprinkle over the turkey and back to fridge until next morning. right when you wake take out of fridge thinly slice an apple and put between skin and meat. at this time i get half stick of butter and microwave for a few seconds just when it begins to melt. I rub this on and pour any left inbetween skin and meat. I then square an apple or 2 and onion and stuff the cavity. I heat to 350 and put foil over the breast. put a bit of chicken stock on pan then Insert legs first to the oven.(foil still on breast) I cook for a few hrs until legs start to brown then check temp should be between 120-140(you want dark meat to be 180.) when this happens i baste and take foil off breast and turn oven to 425 and let the thermomoter tell me when its time to take out. Everyone says 325 for but ass long time but common sense tells me that would dry out the turkey. After I pull from oven I put piece of foil over turkey then towel over foil. Let sit for 30 minutes and enjoy. I am still tinkering with exact times to turn up the oven and to what temp. but the above is what I did yesterday and Myself my wife daughter and her parents and brother and sister took down an 18 lber and they are small asian folk. | |

It's not like fried chicken since it doesn't have any kind of breading on it or anything. I think I first heard about fried turkey when the stat came out about how many people die each year because they try to fry a frozen turkey and that shit explodes. I have had fried turkey twice and it was extremely juicy and had different kind of flavor to it then the traditional roasted turkey. You do need a big ass pot usually to fry up that big bird. | |
